Just a quick question...  Does anyone know if it is possible to run BTDEX in the optional Linux environment on a Chromebook?

If it is, an overview on how to set it up would be much appreciated.

I think so.  See https://github.com/btdex/btdex/releases
I think the "all" download should work in Linux.

As far as  an overview, it does not require much.  The program is a single stand-alone executable file.  A configuration file gets generated when you run it the first time.  You will need to enter your SIGNUM 12-word key (or create a new one) to associate your wallet.

If you want to use BTDEX for mining, it is a bit more complicated and you can get help from whatever pool you select to work with.

As far a trading on BTDEX, there are some good videos that can help:

Yes, it works for Linux. I used it before on Linux no problem. I never tested it on Linux in a Chromebook though.

BTDEX work great on a low spec computer. It should be no problem.  Liquidity is low in some markets so you need to be patient.

I'm still using version 0.5.6 and it takes low computer resources. It's a good peer-to-peer decentralized exchange that has other features built in such as token creation. I do not think you will have any problems running this on any type of computer.
